I’m looking to copy a date from a SUBITEM to the ITEM level. I want to have the manual input on the SUBITEM level and just copy the date I’ve input to the ITEM level. the date is not specific to being 10 days out from today or today. I do not seem to find an automation that enables ‘copy date to date’…

Unfortunately, you are correct. There is not currently a way to set the date of an item equal to the date of a subitem.
I would suggest just having the date in the time since it sounds like you are only using one date/subitem per item, and you can have the subitems open without seeing the items columns, so the date will always be visible.
