KPI Dashboard Based On How Many Times Status Changed to X

I’m looking to setup a KPI dashboard for our sales team, essentially displaying number of quotes sent, quotes accepted, and jobs processed (the step after accepting a quote). Broken down by user, per month.

We add leads/jobs as ITEMS. And have a STATUS column that gets changed to “Quote Sent, Quote Accepted, Job Processed”. When a job is marked as ‘Job Processed’ it moves it to another board (making it a bit difficult to use a dashboard pulling live data from the current board)

Ideally we need a dashboard that can record the status changes and create a dashboard reporting how many times each status has been triggered (during the specific time period filtered, usually monthly but helpful if we can filter by any date range + person).

Any suggestions where/how to get started setting this up?
