I just created a new Project so I can take advantage of the sub-sub items and there are a few things I don’t love. The first is that I can’t set up automations on the roll up status columns without an indirect work around but the second is this random column that I can’t seem to do anything with.
What is its purpose? Why can’t I delete or adjust it? Am I missing out on a great feature?

You’re not missing anything. What you’re seeing are current monday.com limitations.
Automations cannot trigger directly from rollup or formula results yet. The common workaround is to copy that value into a real status or numbers column and trigger automations from there.
That extra column you can’t edit or delete is a system column. It supports subitems and relationships behind the scenes but has no user facing function. System columns can’t be customized or removed so most teams just hide them.
