Map item columns from item updates

I’d like to be able to have new leads automatically populate item columns. Currently when a new lead is received in my email (outlook), an automation with create a new item in MDC with the subject line of the email, as the item name, and the body of the email as an update to that item. I either need the information to get parsed while the new item is created, and columns get updated, or i need an automation to map the information from the email body in the item update, to appropriate columns.
