No Log for Emails & Activities

So I am using the Email & Activities to track emails tied to a specific client. And our email server is hosted on GMAIL. The problem though that it’s over-sharing/saving because it’s NOT only saving the emails that are bcc: to the CRM email. It’s saving ANYTHING that matches to the email address in the thread of the email. This is dangerous because of certain confidential information so I then discovered the No Log feature but then I realized this No Log applies to both receiver and sender, and in reality, I want to be able to toggle this and choose should any of their communications be NOT recorded per direction (not both ways).
