Description
Filtering Parent Items and Subitems: When applying filters, Monday.com will always show both the parent item and its subitems if either one meets your filter criteria—even if the other is empty. An empty parent item will still display if its subitems meet the criteria, and vice versa. Only when both a parent and its subitems do not meet the filter will they be fully hidden.

Ability to hide empty series or select certain series when displaying parent and sub-item data in the same chart.
Under widget settings > customize > edit color name and order:
Add check box to show/hide data series.
