HI all! Is there a way to organize boards within folders alphabetically? It seems like such an easy win and would make organization so much easier. At this point, I keep having to drag/drop so things stay in alpha order.
Any tips? Am I totally missing something obvious?

I don’t know of a way, but maybe check the feature request section and if it’s not already there, request it?

You’re not missing anything obvious here 
At the moment, monday doesn’t support automatic alphabetical sorting for boards or folders. The order is fully manual, so drag and drop is currently the only way to keep things in alpha order.
A couple of light workarounds that help in practice are using consistent naming conventions like prefixes or numbers so boards naturally group together, or creating a simple “index” board or dashboard with links to your most important boards.
This is also a pretty common request, so it’s worth submitting as a feature request.
