When I make a Sub Item I can Make a status based on sub items status but if i collapse the group the status of all the sub-statuses aren’t collated like they are with the sub status.

If you click on the 3 dot menu at the top of the status column and then go to “Settings”, then “Show column summary” this should show you a rolled up view of the item statuses. Note it is showing at the item level, not the subitem level.
See below for the settings option you need to use.
