Have View where you can customize order of fields and which items to display/hide

I would like the ability to have a view where you search a project and the view displays all completed fields in the view, with the ability to reorder them. Currently, item cards seems the closest. I can show/hide specific columns, but I cannot put them in the order that makes the most sense for that view. It also restricts the size of the boxes. So if someone entered notes that are long, I can’t see the full notes section.
