It’s not possible to specify automations per item but you could set up another status column, name it after the person or item, and then specifically only manually trigger it when you want it to trigger the action for that item.
Does this make sense? Let me know if I didn’t quite explain it well!

I have made another status column which is simply Yes / No and hidden from the rest of the team.
This also allows us to change which ones automatically e-mail the specific team member.
