I created a Workdoc with a Table in it. I’ve now found that I’d rather just use the table, because the workdoc portion isn’t helping with what I want. How can I “extract” the table from the workdoc?

You can’t directly extract a table from a Workdoc and turn it into a standalone table or board. Tables inside Workdocs stay part of the doc and don’t behave like board data.
If you just need the content elsewhere, you can copy and paste the table into another Workdoc, a board update, or an external tool.
If you want the data to act like real items and columns, the best option is to recreate the table in a board. Boards let you use automations, dashboards, and exports.
You can also export the entire Workdoc, including the table, to Word or PDF from the three dot menu.
