At the moment, each subitem is rolled into one parent ticket on the Kanban board. It would be great if we could deal with each subitem separately on this board
You can use Subitem Kanban for the issue.
It allows you to manage your subitems in a kanban view. Group them according to their status and update status by just drag and drop.
