We use the email parsing feature in zapier to then create an item in Monday. Works pretty well just a zapier cost you need to pay for.
WordPress form sends email → zapier email parser → zapier to monday.com zap

I would love to see a screen shot of your zap. I am not able to get this logic to work for me and to extract the pertinent data.
