Couldn’t find the vote button this, but it has 12945 votes from me for the ability to “hide” subitems or subtasks in a filtered view.
I tried to restrict the view of a subitem column in a separate filtered table view and it restricted the column across all the different views. Thought I had a solution for a minute. SIGH.

If you’re not opposed to using an app, you can use Same Item Multiple Boards to send the subitems as regular items to another board. There, they act as a normal item would - you can hide columns, set automations, and so on. Any change made on the “items” which are “subitems in another board” will be reflected, so no data is lost.
