I am wanting to set up an automation that notifies the task owner if the timeline changes. However, I can’t see that this is an option: I can see how to set an automation that allows me to choose who is notified, but not the task owner, which will vary from task to task. Hi Cath! To confirm, is the task owner assigned to the item through a People Column?
If so, you can select this in the automation recipe to notify the assignee:

I don’t think the platform currently supports notifying the task owner directly through standard automations. You might want to check the documentation or contact support to explore custom solutions or upcoming features.
