Is it possible to change the default language preferences? What we mean is the dates in e-mail notifications, we receive them in English, while all other data is in Polish.

I am afraid it isn’t possible to customise the format of the date in notifications. This is a great request however and I encourage you to submit this as a feature request so our community members can up-vote the request 
This should be addressed by Monday.com. This is an issue that is discussed a lot here and already there are several feature request regarding this. Have a US formatted date makes no sense in many languages, for instance, in my native language Dutch, nor in the language of the country I live in, Portugal.
If the date would be formatted in the preferred format in the date column, it would probably already be fixed.
If a formula generated value could be used in emails & activities, it would already be possible to get the date in a better format (and there would be a lot of more possibilities). Or even if there was a way to copy a formula generated value automatically to a text column, it would work as well.
