Event Board - need a way to add inventory items that will have differeing quantity

We have an event board, subitems are actionable items. One in Softgoods. We want a good way to add differing invontory for each and have differing quantites. Obviously we cant have collumns for each item as some actionable sunitems are things like schedule, vehicles etc. Im at a loss for what would be a good way to manage this.
