Greetings.
As stated in the title of this request, I would like to ask you to please filter out content, which is not supposed to be access to a specific-user, from the board activity log.
Please see following screenshot:
- On the right, column’s permission, restricted to a specific group

- On the left, board’s activity log seen from a standard user, not in the specified group on the right
User on the left (again: not an admin, and not in the shown group) cannot see the “Note pour Revue” field (this is good) but can see the content of it by:
- reading in the board’s activity log
- reading in the item activity’s log as well
This behavior renders this functionality to hide field from specific people / groups… useless as is. Why, then, bother to even hide fields from others 
.
Maybe it’s a feature on Enterprise plan only ? But then again, above-comment applies.
