Automation for "If X hours passed, do this"


We use Monday to process and manage bookings and inquiries in our company.
The problem is that sometimes the agents forget or miss an inquiry or task so we want to create an automation that will alert us is an inquiry is not closed after X time.
I can see that it’s possible to create alerts based on due date, but without time.
We want either to start a timer and alert “after X hours have passed and item is in group”, or set a due date WITH TIME when an item is created.
Both options I don’t see availble.

How can we create a similar automation to what we want?
