Automation to set due date to a specific day of the week (Mondays, Tuesdays, etc)

I need the following for many different use cases:
When an item is created, automatically set the due date for (day of week - i.e. Monday, Tuesday, Wednesday, etc)

Specifically, I have a team member who focuses on a specific type of tasks on Mondays. When someone enters an item on their board, I want the due date to automatically set to the next Monday.

Similarly, we have other days set aside for specific work and it would be great that when an item is added to a group or board, it automatically sets it for a specific day of the week. Setting it ahead a specific number of days does not work if the due date is to be a Wednesday, but the item is set on any random day of the week.

I see no reply for a year, I too am looking for an idea to assign a date with association to a day of week. If you have figured out a formula, i would appreciate if you can share?
