I would like the ability to duplicate an item (with or without its subitems) to another board. I would also like the ability to do this in an automation.

Yes - this is possible with the Mirror Item Multiple Boards app.
Mirror Item allows you to add the same item + subitems with updates+replies included to multiple boards, and keep them in sync.
No need to setup complex automations or workflows.
