I am trying to come up with a way to automatically update a date field when we send emails. That way we can track people who we have not contacted in 30 days, 45 days etc. Any suggestions?

In the Automation Centre, you’ll find many templated and ready to use automation recipes, as well as the ability to make your own custom automations.
For your described use case, I would look to add a status change to the back of your email automation; so if your automation is currently ‘when status changes, send email to person’ I would amend that to be ’ when status changes, send email to person and change other status to x ’
This way, " when status changes to ‘x’ (when email is sent), set date to today" becomes a viable automation to get the job done.

This was very helpful. I think I got it figured out. Now I am trying to get it to notify me of when a date is passed but I think I have that sorted out. Thank you for the help
