So, I’m trying to create a Dashboard that pulls from several boards. I’m using the Numbers widget, but it will only aggregate data from the items in the board itself. I really only want to count the number of boards that this dashboard is pulling from. How might I accomplish this?

The numbers widget functionality is for aggregating data, but there is a number indicator in the top left corner of a dashboard that does count the number of boards that are connected.
As of June 2022, I do not see a widget that can support your use case though.
