How would you work out how long an item on a board has sat at a particular stage ? As in, if you were trying to see how long each stage typically lasts for each line item is there a formula that could give you this?
Appreciate any help in this as it would help with project oversight.

I would recommend using The Time Tracking Column for this instead!
You can create an automation that will automatically start the time tracking when a status changes to something, and stop it when the status changes to another status.

Thank you very much for your suggestion. I have tried implementing this into my board to see how it works and it appears to do what I asked for. Will need to see over a lengthier period if there are any limitations but quite happy currently.
