I have a board where we have a data record, and when a record is interacted with, a note is left in updates. Is there a way to get a report with the dates of these updates?
Unfortunately currently it is not possible to keep track of when an update was made. Since the trigger for an update being made is “when a record is interacted with”, it could be possible to keep track of when said interaction happens depending on your process.
You could for example use a column to manually note when said update was made, though that would be able to track only the last update made. Similarly , you could use a last updated column depending in what other changes are made to each item.

If i got you right Time in Status app can be helpful for you. App track time the Item has spent in each workflow status. So you can get a report with the dates of status updates or delays.

If the person making the update record their time or added a time entry for that update and a note within that entry, it could be reported on using a advanced reporting board which is now available for time trackers using Smart Timer and Team Tracking app which has the same look and feel as the native monday.com timer.
We had the same pain point with our service based business, detailed reporting is so important, so we got our dev to build a solution which we have now released to the monday.com marketplace.
We also built in the ability for the team to see LIVE who is recording time on what, this helps us to manage our remote team and re-delegate work as needed.

There are 2 types of automated reports on a board and item level. On an item level you can get the following reports:
Updates by a specific employee
Updates mentioning a specific employee
Updates containing attachments
Status updates
Last updates
You set up automation rules to get reports every day (week, month) with consolidated updates and detailed xls-report as an attachment. This is how it looks:
