I figured out a way to accomplish this without a marketplace app. You just have to approach the problem backwards. Instead of populating a column with input from your updates, create an update when your team updates a column.
You can use the Board Updates Widget to review all the latest updates from your board, but the method I’ve laid out allows you to easily view the latest updates from your team on every project without having to click into each item, while keeping record of previous updates in the item update feed.

Thank you for this solution! I can’t believe this thread has been alive for so long without a resolution and then when I do need this feature, this post magically arrives the day before I need. it. This is a solid work-around, but upvoting to support a Monday feature so that’s not even needed.

Alternatively, this case can be addressed with the Board Email Reports app. There are 2 types of automated reports on a board and item level. On an item level you can get the following reports:
In this case, we need the Last updates report that will generate automated reports every day or week/month with consolidates updates. You will get an email with a detailed xls-report on item updates in the descending order by date. This is how it looks:
