We have added members to a Workspace. Can they access all the folders and dashboards without us having to add them to each dashboard?

If the dashboards and boards are “Main” (not private), and the new user being added is being added as a member (not a guest), they should be able to see the boards/dashboards/folders in the workspace.
I have taken a screenshot of sample dashboards with the different permission levels of private and main. You can see the private dashboard has a little lock on the icon, while the main dashboard does not. This is how you can quickly identify the permission level of boards and dashboards in your workspace.
