Hello! I am looking for an automation that would help in assigning the people column (for us, for our Salesforce integration). Opportunity Owner comes over in a text column, would be looking for an automation that is basically “when text column [Opp Owner] contains text [name], assign [person]”.

There is no such native automation, but you could do it with the Advanced Formula Booster. It is a 3rd-party app that revolutionize formulas in monday in many ways. The first one is that it can cast its results to any type of columns. In this case, it would be the {Person} column.
You would create a simple formula:
