LOG type:
not possible to see time, only date
not possible to sort items according to time of log, only according to name of creator

Welcome to the monday.com community!
I believe you are referring to the creation log column type.
If you want to see the time the item was created you have to hover over it, like in the following picture.
It also is possible to sort according to the time of the creation log. Just follow the steps at the picture and you can sort by descending or ascending time.
