Do you know if it is possible to automatically add the emails of recipients and cc when I start a new mail in the Email & Activities app (as it is possible to get fields from the board with {}) ?

There is not an automation to send an email through Emails and Activities, but you can set up an email to be sent through Gmail or Outlook.
You would go to your boards Integrations (with the outlet plug icon) and then go to Gmail or Outlook for email automations like this one:
From what I have seen, there is not an option to CC though. It just contains a “to” field.
