Is there a built-in way for a Project (parent item) column (e.g., “% Done”)
to automatically show percent complete or a progress bar
based on the percentage of subitems with Status = Done?

Yep, this is already built into monday
If you’re using Subitems, the parent item can automatically show progress based on the subitems’ Status column.
Two easy ways to do it:
Add a Progress Tracking column to the parent item and set it to track the Subitems Status column. You can choose which status label counts as complete, and it will show a live progress bar as subitems are marked Done.
Or use the Status column settings on the parent item and enable the option to roll up subitem statuses so the parent reflects overall completion.
Both update automatically as subitems change, no formulas or workarounds needed.
