Get boards endpoint shows me whether a board is shared/private etc but I want to know
if there is a way to see which boards are shared with anonymous links?

If what you want to know is which boards have been shared with a “Shareable link” such as https://view.monday.com/401111190-1234567asdf8d11114?r=use1, that can not be done.
You can not get that information with the API.
