Hi! My workflow starts by creating an item, updating the progress status, and then creating subitems under the main item. Is there a way to set the start date or due date to today?

You could just use a creation log field and call it Start date and change the settings on the field to just date
That way every time you create a subitem it will set the date to today as it uses the date you created the subitem
Another way is to use an automation, when you change the status on the parent item set the subitem date to current date + 0 days
