At this time, email automations (Outlook and Gmail) only have basic text formatting. Users cannot bold, italicize, or underline text in their email templates yet. However, it looks like a feature request was recently submitted to prioritize this on the Product Roadmap. You can upvote it here: Enhanced Text Formatting for Automated Emails.
