I want to set the outlook integration that when an email is received, add it as an update - however the email column is in a subitem.
Any suggestions?

Welcome to the monday community! 
Unfortunately the native monday outlook/gmail integrations work only on the main item level.
So it is not really possible to add the emails as updates on the subitem level.
You would have to use a platform like Make.com to achieve this.

In Make, you can set up an Outlook integration that triggers an action when an email is received and adds it as an update, even if the email column is in a subitem.
